Sabudana Khichdi
For 2 people
Ingredients:
- 1 cup Sabudana
- ¼ cup peanuts
- 2 table spoon ghee
- ½ teaspoon cumin seeds (jeera)
- 1 spring curry leaves
- 1 to 2 green chilli (chopped or slit)
- 1 medium boiled potato
- ½ teaspoon sendha namk
- 2 table spoon coriander leaves, finely chopped
- ½ teaspoon sugar (optional)
- 1 tablespoon lemon juice
Method:
- Heat ghee or oil in a pan. Then ass cumin, green chillies, ginger and curry leaves.
- Sauté them for a minute and then add cubed boiled potatoes. Sauté them for 1 to 2 minutes.
- Meanwhile mix together Sabudana, salt, sugar and peanut powder (optional).
- Regulate the flame to high. Add Sabudana to the pan along with coconut (optional).
- Stir and sauté for 2 to 3 minutes or until transparent. Overcooking can make them sticky.
- Immediately remove the heat. Squeeze in the lemon juice, add coriander leaves and roasted peanuts.
- Mix the lemon juice tightly. This helps to release any Sabudana stuck together.
- Serve Sabudana khichdi with yoghurt.
