Sabudana Khichdi

For 2 people

Ingredients:

  • 1 cup Sabudana
  • ¼ cup peanuts
  • 2 table spoon ghee
  • ½ teaspoon cumin seeds (jeera)
  • 1 spring curry leaves
  • 1 to 2 green chilli (chopped or slit)
  • 1 medium boiled potato
  • ½ teaspoon sendha namk
  • 2 table spoon coriander leaves, finely chopped
  • ½ teaspoon sugar (optional)
  • 1 tablespoon lemon juice

Method:

  • Heat ghee or oil in a pan. Then ass cumin, green chillies, ginger and curry leaves.
  • Sauté them for a minute and then add cubed boiled potatoes. Sauté them for 1 to 2 minutes.
  • Meanwhile mix together Sabudana, salt, sugar and peanut powder (optional).
  • Regulate the flame to high. Add Sabudana to the pan along with coconut (optional).
  • Stir and sauté for 2 to 3 minutes or until transparent. Overcooking can make them sticky.
  • Immediately remove the heat. Squeeze in the lemon juice, add coriander leaves and roasted peanuts.
  • Mix the lemon juice tightly. This helps to release any Sabudana stuck together.
  • Serve Sabudana khichdi with yoghurt.
