Vegetable Poha

Ingredients

  1. Poha- 3 spoons (15 gms)
  2. Oats bran: 2 spoons (10 gms)
  3. Peas: a handful
  4. Mushrooms: 2-3 (optional)
  5. Beans: 3-4
  6. Onion: 1 small
  7. Capsicum: ½- 1 small
  8. Carrots: 1 small
  9. Mustard seeds: ½ teaspoon
  10. Curry patta: 4-5
  11. Green chilli: 1
  12. Oil: ½ Spoon

Preparation:

  1. Put half spoon oil in the pan, add mustard seeds, curry patta, chopped onion, chopped green chilli and cook.
  2. In a separate katori soak poha and oats bran and drain off the water.
  3. Add all the vegetables and keep for some time on slow flame.
  4. Add soaked poha, oats bran in cooked vegetables.
  5. Continuously stir the mixture and add salt, turmeric etc.
  6. Add lemon juice and keep for 6-10 minutes on slow flame.
  7. Serve hot.
