Masala Omlette

Ingredients:

  • 3 eggs
  • 1 medium onion, finely chopped
  • 2 tablespoon oil
  • 2-3 green chillies, finely chopped
  • 1 tsp red chilli powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • ½ tsp sugar
  • ¼ chopped capsicum
  • 2 tablespoon chopped coriander
  • 2 teaspoon grated processed cheese

Method:

  • Heat one tablespoon oil in a non-stick pan. Add green chillies, sauté and add onions. Sauté till golden brown.
  • Add tomatoes, sauté for 2 min on high heat.
  • Add red chilli powder, turmeric powder, cumin powder, coriander powder and stir well.
  • Add salt and mix well. Sprinkle some water and mix well.
  • Add sugar and capsicum and mix well
  • Switch off heat and allow it to cool.
  • Break the eggs in a bowl. Add little salt and beat well.
  • Add the prepared mixture to the eggs and mix well.
  • Add coriander and mix well. Add cheese and mix.
  • Heat remaining oil in a non-stick pan. Pour the mixture and spread evenly.
  • Lower the heat, cover and cook for two to three minutes or till the eggs are cooked well.
  • Remove in a serving plate & serve hot with toasted bread.
